Traditional Scottish Pancakes

Uncle Willie's Pancakes


  • 148g novofarina yellow pea flour
  • 59g Rice flour
  • 98.5g sugar
  • 2 heaped teaspoons baking powder
  • 1 Dessert spoon custard powder
  • 1 large egg
  • 235ml Milk


Place flours, baking powder, custard powder and sugar in a bowl and stir to combine

Crack an egg into a bowl and whisk

Make a well in the centre of the dry ingredients, add the egg and whisk together

Add the milk slowly, a little at a time, whisking together until you have a smooth thick batter

Add a small knob of butter to a non-stick pan and once melted, add a ladle ful of batter. Cook on a medium heat until bubbles appear on top.

Turn and cook on the other side for a few minutes.
