Sweet Potato & Char-grilled Tomato Muffin

Sweet Potato & Char-grilled Tomato Muffin


  • 120g novofarina yellow pea flour
  • 57g Rice Flour
  • 1.5 tsp baking powder
  • 0.5 tsp bicarbonate of soda
  • 1-2 tsp salt
  • 96g sugar
  • 2 large eggs
  • 120ml milk
  • 120ml Rapeseed oil 
  • 70g sweet potato (grated raw)
  • 85g cherry tomaotoes on the vine (roasted and cut in half)
  • 2g Fresh Basil - torn


Makes 12 muffins

Pre-heat oven to 180°C

Mix the dry ingredients together

Add the grated Sweet potato to the dry ingredients

In a separate jug, mix the milk oil and eggs together

Gradually mix the liquid into the the dry ingredients and then add in the basil and cherry tomatoes.

Place into the muffin cases in the tray

Bake at 180°C for 20-25 minutes 

 Why not try adding caramelised onions, and feta to the mix.
